Asian pumpkin salad

The original calls for prawns but as those are dwindling and/or getting polluted, avocadoes would do nicely instead.

  • 1 small pumpkin
  • coriander leaves
  • shallots
  • fresh lime juice
  • sesame oil
  • olive oil and salt to roast the pumpkin
  • soy sauce
  • sweet chilli sauce
  • crushed cashew nuts or peanuts or toasted peppitas
  • freshly cooked prawns (fried with garlic and ginger), shelled, or avocado for vego option
  • rocket leaves or shaved cucumber

Chop the pumpkin into smallish cubes, toss in olive oil and a pinch of salt, then roast in an air fryer pre-warmed to 195C for 15 minutes. (Probably half an hour in a regular oven.) Fry the prawns in crushed garlic and grated ginger in olive oil. Then mix all ingredients together, nice and fast. Yum!
