I confess I\’ve never made this before but I\’ve enjoyed eating it and asked for the recipe. I rarely eat stone fruit, seeing as they come from colder climates, but I will look out for them next time they\’re in season.
- various stone fruit such as peaches, nectarines and apricots
- 1 tsp vanilla
- quarter cup freshly squeezed lemon juice
- lemon rind
- 5 crushed cardamom pods (or ground equivalent)
- quarter cup (about 175g?) sugar
- some cinnamon
- some nutmeg
Method:
- Preheat the oven to 220C.
- Halve the fruits and remove the seeds.
- Line a tray with baking paper and place the fruit cut side up.
- Blitz together all the other ingredients so they are well mixed.
- Spoon this evenly over the fruit.
- Bake for about 20 minutes, until the fruit is tender with a fork.
- Serve with vanilla ice cream.
