Baked Stone Fruit

I confess I\’ve never made this before but I\’ve enjoyed eating it and asked for the recipe. I rarely eat stone fruit, seeing as they come from colder climates, but I will look out for them next time they\’re in season.

  • various stone fruit such as peaches, nectarines and apricots
  • 1 tsp vanilla
  • quarter cup freshly squeezed lemon juice
  • lemon rind
  • 5 crushed cardamom pods (or ground equivalent)
  • quarter cup (about 175g?) sugar
  • some cinnamon
  • some nutmeg

Method:

  1. Preheat the oven to 220C.
  2. Halve the fruits and remove the seeds.
  3. Line a tray with baking paper and place the fruit cut side up.
  4. Blitz together all the other ingredients so they are well mixed.
  5. Spoon this evenly over the fruit.
  6. Bake for about 20 minutes, until the fruit is tender with a fork.
  7. Serve with vanilla ice cream.
