My kids flat-out will not eat peas so this is not a recipe I\’ve made often.
- 3 cups frozen peas, just recently thawed
- 6 eggs, boiled for about 9 minutes and dunked in cold water before peeling and halving.
- 1.5 cups bacon, diced and fried
- 1 cup shallots, diced
- half a cold iceberg lettuce, chopped
- 1 cup shredded parmesan
- optional: jalapenos (again!)
- dressing: 2 tbs sour cream, 3 tbs mayonnaise, 3 tsp Dijon mustard, juice of 1 lemon, optional: 1 small crushed garlic (roasted garlic is always preferable if time permits)
Note: mix the eggs through last so they don\’t break up.
