This is a handy camping recipe for pikelets (don\’t necessarily need bananas). Just remember the 1:1:1 rule (flour:milk:egg) and add a sweetener or fruit if you like – or serve with the fruit on top and drizzled honey.
- 2 cups flour
- 2 cups milk (or 1 cup milk and 1 cup ricotta)
- 2 eggs, beaten
- 2 ladyfinger bananas, mashed with the back of a fork
- optional: honey, raw sugar, cinnamon or nutmeg
- Add the eggs to the milk first.
- Add the sugar and spices (if using) to the flour.
- Combine both bowls and add in the mashed banana.
- Heat 1 tbs olive oil over low to medium heat.
- Use a spoon or pouring jug to dollop mixture in pan.
- When bubbles appear on the surface, it\’s time to flip. Less time is needed on the other side.
