Banana Pikelets

This is a handy camping recipe for pikelets (don\’t necessarily need bananas). Just remember the 1:1:1 rule (flour:milk:egg) and add a sweetener or fruit if you like – or serve with the fruit on top and drizzled honey.

  • 2 cups flour
  • 2 cups milk (or 1 cup milk and 1 cup ricotta)
  • 2 eggs, beaten
  • 2 ladyfinger bananas, mashed with the back of a fork
  • optional: honey, raw sugar, cinnamon or nutmeg
  1. Add the eggs to the milk first.
  2. Add the sugar and spices (if using) to the flour.
  3. Combine both bowls and add in the mashed banana.
  4. Heat 1 tbs olive oil over low to medium heat.
  5. Use a spoon or pouring jug to dollop mixture in pan.
  6. When bubbles appear on the surface, it\’s time to flip. Less time is needed on the other side.
