Sausages, chips and corn

This is definitely not something I\’d cook for myself but alas, to keep the kids happy, it makes it onto the regular rotation. It\’s also simple. Sometimes the sausages get swapped out for some other quick protein like fish, lamb patties or cutlets. My eventual hope is to try out different vego sausages and see if any are accepted.

Sausages: I usually follow my mum by boiling the sausages first (a) to get some of the fat out, (b) to make sure they are cooked through, (c) to speed things up, especially if the sausages were still frozen not long before having to cook them, and (d) to reduce messy splatter-time. They taste the same if not better than only-fried IMO. If you spear the sausages with a fork halfway through boiling, you\’ll see how much fat gushes out! After draining, quickly brown them on the stovetop. Use a paper towel to mop up the awful fat left in the frying pan before washing.

Chips: I\’ve only ever made them in the air fryer. I used to hand-chop them… (hahahahaha… as if!!!!!) Actually, I used to peel and push through the chip disc on the food processor but even that is too tedious (because you then have to soak them for half an hour after), so now I just buy them from the freezer section at the supermarket. Unfortunately, commercial chips all seem to have dextrose added – no getting past it. But laziness wins out. Depending on the size of the cut, they go in for about 15 minutes at 185C.

Corn: I use the electric pressure cooker for this just so I don\’t have to keep an eye on anything, not necessarily to save time. The trivet goes down and the water is filled to the top of it (about a cup). The steaming basket goes in with corn cobs halved. High pressure for 3 minutes, quick release.
