Sometimes (often times!) I just don\’t want to think. Funnily enough, this happens a lot when it comes to food prep so I\’ve made myself a fallback menu to help with the grocery run. In reality, we never cook every night of the week. There are always leftovers or toasted sandwiches along the way.

Monday
Tuesday
- lamb tagine with pearled couscous – or
- lamb coconut curry with rice – or
- pumpkin soup with bread….
Wednesday
- pan-fried fish with chips
- corn and/or asparagus
Thursday
- lemongrass beef and buk choi – or
- steak with mushroom and oyster sauce plus stir-fried veg.
- rice
Friday
- fried rice or noodles of some sort
Saturday
- pasta Napolitana – and/or
- moussaka
- salad or soup
Sunday
Week 2
Monday
- pork sausages and chips
- corn and/or asparagus
Tuesday
- roasted Mediterranean veggies
- pearled couscous with goat\’s cheese
Wednesday
- tomato soup with bread – or
- zucchini carbonara – or
- beef goulash with pearled couscous….
Thursday
- soy chicken (oven or stovetop)
- leafy green Asian veggies
- rice
Friday
Saturday
- pasta pesto – and/or
- filos
