Miso Soup

This is a quick fix, like having a cup of tea, just a bit more filling! The miso packet stays in the fridge and between white or red, I probably prefer white.

  • 1 seaweed sheet (nori, also used for sushi) cut into squares
  • 1 tbs miso
  • half a stem of shallots, chopped
  • soft silken tofu, cubed
  • 2 cups stock (e.g. from 1 stock cube)
  • sesame oil
  • optional: Chinese black fungus pre-soaked.
  • optional: rice vermicelli noodles cooked for 4 minutes.
