Watercress Soup

This simple soup is only worthwhile if you can find abundant and cheap watercress. For some reason in Australia, watercress seems to be more of a garnish than a main vegetable, with a price tag to match. This is a good soup for pregnant women due to all the ginger, which helps with nausea, plus watercress is highly nutritious.

  • pork spare ribs – don\’t need too many. The bones are good for the stock.
  • lots and lots of ginger, skinned and chopped. Maybe a fist-size of ginger.
  • lots and lots of watercress because it shrinks to nothing.
  • salt (a fair bit, depending on how much water there is)
  • water

Boil the spare ribs with the ginger for 50 minutes. Add the watercress and salt at the very end.
